01 / ABOUT THE PLACE

About this place

Behind a glass display case lined with 1 varieties of bread, each paired with its price card, J's Bakery operates as an over-the-counter shop where staff pack each order by hand. Dedicated entirely to takeaway, the quiet storefront focuses primarily on shokupan (Japanese-style loaf bread) and versatile everyday loaves.

The bakery's signature loaves cater to different preferences for crumb and texture. The "fluffy shokupan," made with a sponge dough that undergoes long, cold fermentation, has a gentle sweetness and remains soft right through to the crust. By contrast, the "pain de mie" is baked to a deep, aromatic finish with restrained sweetness, offering a firmer, more substantial crust to chew on. Different dough preparations yield further distinct profiles, including a "chewy shokupan" prepared with cold-matured yudane (scalded flour paste), and an unpretentious British-style loaf that comes out of the oven on Saturday afternoons.

Day-specific bakes expand the selection further. On Wednesdays, Saturdays, and Sundays, the bakery introduces seigle loaves made with 40% whole rye flour, spanning the plain "Seigle 40", a fruit-packed "Seigle Fruits" studded with raisins, figs, orange, and cranberries, and a version combining cream cheese and raisins. Speciality listings also feature distinctive items like sesame bean paste shokupan and an apple and white chocolate loaf.

A midday break divides business hours between 13:30 and 15:30, making the afternoon reopening a practical time to drop by. In addition to cash, transportation IC cards are accepted, making it easy to pop in around the scheduled bake times.
